Easy Pumpkin Spice Rooibos Carrot Cupcakes with Cream Cheese Icing

Yield: 24 cupcakes

Ingredients for Cupcakes

1 box Classic Carrot Cake mix (For example Duncan Hines)

6 bags Second Cup Pumpkin Spice Rooibos Tea steeped in 1 ¼ cups boiling water

Ingredients for Cream Cheese Icing

170g of cream cheese (at room temperature)

½ cup softened margarine or butter

2 teaspoons vanilla

4-½ to 4-¾ cups icing sugar

Preparation Instructions for Cupcakes

1. Preheat oven to 350⁰ F (180⁰C).
2. Place a cupcake liner in each spot of a cupcake baking tin.
3. Boil 1 ¼ cups water. Place 6 Second Cup Pumpkin Rooibos tea bags in the boiling water and steep for 5-7 minutes. Strain. Discard the wet tea bags and retain the steeped Pumpkin Spice Rooibos tea liquid.
4. Follow directions on box for mixing and preparation of Carrot Cake Mix replacing the 1 ¼ cups of water,  with 1 ¼ cups of steeped Pumpkin Spice Rooibos tea liquid. DO NOT add any additional water.
5. Pour batter in prepared pans and baked immediately, following baking directions on the cake mix box.
6. Cupcakes are done when they bounce-back after touching or a toothpick inserted in the middle comes out clean.
7. Cool cupcakes completely before applying icing.

Preparation Instructions for Cream Cheese Icing

1. In a bowl, beat together cream cheese, margarine or butter, and vanilla until light and fluffy.
2. Gradually add 2 cups of icing sugar. Beat well.
3. Gradually beat in enough of the remaining icing sugar until icing is smooth and spreadable.
4. Ice cupcakes as desired.
