Grinds are numbered on a scale from 1 to 9, with 1 being the finest grind and 9 the coarsest. As a rule, the longer water is in contact with coffee during the brewing process, the coarser the grind you should use. For example, espresso will have the finest grind (a 1), while a regular cup from a drip coffee maker will be more coarse (say a 6 or 7). For our brewed coffees in our cafes, we use a 7 out of 9 in terms of grind.
