Moving into an air-tight and opaque container, from the bag of purchase, will increase coffee freshness; especially if you are storing coffee for longer than one week.  One thing I do to reduce over-grinding is to measure the volume of beans I need with a measuring cup or scoop (a ¼ cup scoop usually works well).  This way you can scoop the right volume of coffee beans into your grinder, without worrying about storing or holding onto extra grinds.  Coffee stales much more quickly once ground, as there is more coffee surface area exposed to air, temperature and moisture.</description>
